Khati Khejur Ros (খাটি খেজুর রস / Pure Date Palm Sap) is a iconic winter delicacy deeply rooted in the culture and culinary traditions of Bengal (West Bengal and Bangladesh). It refers to the 100% natural, unadulterated, raw sap collected overnight from silver date palm trees (Phoenix sylvestris).
Drunk fresh as an early-morning seasonal treat, boiled into famous varieties of date palm jaggery (Nolen Gur and Patali Gur), or used as a sweet base for traditional Bengali desserts like Payesh and Pitha.
